As stated in the story the owner (Steve) used real walnut on the wheel, dash, and glove box. A competent woodworker should be able to make new wheel trim pieces (that's a stock deluxe interior woodgrain wheel with the plastic grip replaced with real wood).

I know at one time Orlando Classic Mustang offered a service to replace/restore the wheel with real wood.

Orlando Classic Mustangs no longer offer the service - I've talked to them recently. The wheel is basically made in two pieces that wrap around the 1/4" ring around the wheel core.  I re-used the original thin metal bands that surround the inner and outer circumference of the wheel. You can see the details on my website (http://mustang.growingwithscience.info/Steves_66_Mustang/Steering_Wheel.html). I've made similar wheels for three other mustangers in the last year.  Steve
